    Here is what you'll need to make these baked parmesan crusted carrot fries for toddlers.

    • Coconut milk (full-fat)
    • Panko bread crumbs
    • Olive oil
    • Garlic powder
    • Parmesan cheese
    • Pinch of salt

    Instructions

    Peel and wash the carrots, then slice them into fry-shaped sticks, aiming for similar sizes so they cook evenly.

    Set up your coating stations: Pour the coconut milk into a shallow bowl. In a separate bowl, mix together the panko breadcrumbs, parmesan cheese, olive oil, garlic powder, and dash of salt.

    Dip each carrot stick into the coconut milk, letting any excess drip off.

    Then coat in the breadcrumb mixture, pressing gently so it sticks.

    Place the coated carrot fries in a single layer on the parchment lined baking sheet, making sure they aren’t overlapping. Bake in the oven at 400°F for 16-18 minutes, until the coating is golden and the carrots are tender.

    Remove and let cool for a few minutes before serving. Serve with a dip or alongside a main!

    Hint: For the best texture, make sure to spread them out in a single layer on the baking sheet and avoid overcrowding. If they’re too close together, they’ll steam instead of crisp.

    Substitutions

    • Coconut milk - instead of coconut milk you could swap in regular milk. The coconut milk does add a rich flavour with a subtle coconut taste, but regular milk will still work.
    • Breadcrumbs - You can swap out the Panko breadcrumbs for regular breadcrumbs. They will be slightly softer, but still have a "french fry" like texture!

    • Italian-style carrot fries - Add ½ teaspoon of dried oregano or Italian seasoning to the breadcrumb mixture for a slightly different flavour.
    • Extra cheesy - Add a little more parmesan or mix in some finely shredded cheddar for a stronger cheesy flavour.

    How To Store Baked Parmesan Crusted Carrot Fries For Toddlers

    Store any leftover carrot fries in an airtight container in the fridge for up to 3 days.

    To reheat, place them back in the oven or air fryer at 375°F (190°C) for a few minutes until warmed through and crisped up again. They will soften in the fridge, so reheating helps bring back some of that texture.

    Freezing is not recommended, as the coating can become soggy once thawed.
