    These Strawberry Frozen Yogurt Protein Bars are easy-to-make, high in protein and LOADED with awesome fibre-rich ingredients. These bars make the perfect snack for those hot summer days!

    These Strawberry Yogurt bars are frozen so they are one of our favourite snacks to have in the summertime!

    Ingredients

    • coconut oil

    • unsweetened Vanilla Greek yogurt (or yogurt of choice)
    • pumpkin seeds
    • hemp seeds
    • unsweetened coconut

    Instructions

    Step 1 making the strawberry chia mixture. Strawberries are added to a pot with coconut oil.

    In a medium pot on medium heat, add the strawberries, coconut oil and optional maple syrup. Stir for 5-10 minutes until the strawberries begin to thaw.

    Step 2 of frozen yogurt protein bars. Chia seeds are added to strawberries in a pot on low heat.

    Reduce heat to low and add the chia seeds. Stir for another 5-10 minutes. Remove from heat and let sit to thicken up.

    Step 3 of frozen yogurt protein bars. Ingredients for the crust added to a blender and blended together.

    Prepare the crust. In a food processor, add the pumpkin seeds, hemp seeds, and oats and blend until well combined. Add the coconut oil and optional maple syrup and mix together.

    Step 4 for strawberry yogurt protein bars. Yogurt and strawberry chia jam are added on top of crust in a square pink pan on a white marble background.

    In a square pan, add the crust mixture. Pat down firmly. Add the yogurt on top and smooth down. Then add strawberry-chia mixture to the top. Cover and place in the freezer.

    Hint: Remove the pan from the freezer after 15 minutes (or when slightly firm) and slice into bars (before frozen solid). Then place back in the freezer to firm up more.

    Substitutions

    • Other fruit - I love this recipe with strawberries, but other berries also work well such as blueberries or raspberries.
    • Gluten free - rolled oats are naturally gluten-free, but are at risk for cross-contamination with other gluten containing foods. To make these 100% gluten-free, ensure the oats are "Certified Gluten-Free" oats.

    Variations

    • Swap ½ teaspoon almond extract for the vanilla in the crust for a delicious almond flavour!

    Storage

    Bars can be stored in an airtight container in the freezer for up to 4 weeks.

    Top tip

    When adding the berry chia jam, swirl into the yogurt for a fun, decorative look!

    FAQ

    Can toddlers have frozen yogurt?

    These frozen yogurt bars can be made with a regular yogurt that your toddler is already consuming, therefore, this type of frozen yogurt is a great option! You can also remove the maple syrup from this recipe if you wish, as the recipe is sweetened naturally with the berries!

    Strawberry Frozen Yogurt Protein Bars

    Equipment

    Ingredients

    Strawberry Yogurt Topping

    • 2 cups frozen strawberries
    • 1 tablespoon coconut oil
    • 1 tablespoon maple syrup (optional)
    • 2 tablespoons chia seeds
    • 1 teaspoon vanilla
    • 1 cup unsweetened Greek yogurt (plain or vanilla)

    Crust

    • 1 cup pumpkin seeds
    • ¼ cup hemp seeds
    • ½ cup unsweetened coconut
    • 2 cups rolled oats large flake or quick oats
    • ⅓ cup coconut oil
    • 3 tablespoons maple syrup (optional)
    • 2 teaspoons vanilla

    Instructions

    • In a medium pot, add the coconut oil and frozen strawberries. Stir frequently over medium heat until berries have softened. Reduce heat to low, and add the maple syrup and chia seeds. Stir frequently for 8-10 minutes, mashing up the berries as you go.
    • Remove from heat, pour into a medium bowl, cover with saran wrap and let sit on the counter to thicken for 8-10 minutes.
    • Meanwhile, in a food processor or high speed blender, add the pumpkin seeds, hemp seeds, and oats and blend until well combined.
    • Melt the coconut oil. Then add melted coconut oil, maple syrup and vanilla to the food processor or blender and mix together until the ingredients are combined.
    • In a 9-inch square pan, pour in the mixture and pat down with a spatula.
    • Add the yogurt on top and spread out evenly. Add the strawberry chia mixture and swirl in with a knife.
    • Cover with saran wrap or foil and place in the freezer for 10-15 minutes or until slightly firm.
    • Remove from the freezer. Slice into bars and individually wrap or place bars in an airtight container and place back in the freezer for at least 1-2 hours. Bars can be stored for 3-4 weeks in the freezer.

    Notes

    It can be helpful to remove the bars from the freezer and let them soften slightly before serving!
    You can omit the maple syrup if you like, it will be slightly less sweet but still delicious!
