    Quick and easy snacks are so important in our household. This guacamole can be whipped up in less than 5 minutes and can be served with whole grain crackers, veggies, or toast strips.

    Ingredients for Edamame Guacamole

    • Avocado
    • Garlic powder or fresh garlic
    • Juice of 1 lime
    • Edamame beans
    • Dash of salt (optional)

    How To Make Edamame Guacamole

    Step 1 for high protein guacamole. Blending ingredients in a food processor.

    Slice avocado and scoop out flesh into a food processor. Add all ingredients into food processor and pulse until smooth or slightly chunky.

    Hint: If you like your guacamole a little chunky, pulse for 10-15 seconds. For a smoother consistency, use the puree option and blend for 20-30 seconds.

    Variations

    There are so many variations you can do with this guacamole!

    • Tomatoes - dice up some tomatoes and add them in after you have blended the guacamole.
    • Cilantro - add 2 tbsps diced cilantro
    • Onion - add 2 tbsps diced onion for a little extra kick

    Equipment

    • Food processor

    A food processor is helpful for quickly whipping this up but you could make this in a bowl and mash everything together using a fork.

    Storage

    I find this dip is best to consume right away or at least the same day!

    Top tip

    This is a great snack option for toddlers and kids. Pair this fun guacamole with veggies like carrots or cucumbers or peppers, or with some whole grain crackers or whole wheat toast or pita. Toast is a great option if your little one is still a bit too young for crackers. For harder veggies like carrots, you can steam them first to make a little softer.

    Can I serve this edamame guacamole to younger toddlers?

    Yes! This dip has a smooth, scoopable texture and no added salt. You can blend it into as smooth of a consistency as you like.

    How can I serve this guacamole for toddlers?

    This dip is super versatile. Serve with soft veggies, whole grain crackers, toast, or spread inside sandwiches or wraps. It also goes great with some lightly toasted naan bread. I love including this dip in deconstructed meals, giving toddlers a chance to explore it and add it into their meal if they wish.

    Equipment

    • 1 Food processor

    Ingredients

    • 1 avocado
    • 1 cup edamame beans shelled, cooked
    • ½ lime juiced
    • ½ teaspoon garlic powder or 1 teaspoon fresh garlic
    • 1 tablespoon cilantro optional
    • 1 tablespoon onion or shallot optional

    Instructions

    • Scoop out flesh of avocado and add to a food processor.
    • Add edamame beans to food processor. If they are frozen, cook first according to package instructions before adding.
    • Squeeze half of one lime.
    • Add garlic powder or fresh garlic.
    • Add any optional ingredients that you desire.
    • Pulse or puree in the food processor until the dip reaches the desired consistency. We like leaving ours a little chunky!
    • Serve with veggies, crackers, whole grain toast or pita!
