Heat strawberries in a saucepan on medium heat, stirring frequently until the fruit begins to break down and bubble.

Turn the heat to low and add the chia seeds, lemon and vanilla. Stir together and cook for another 5 minutes.

Remove from heat and let cool for 5-10 minutes to thicken up.
Hint: It is important to give the chia jam some time to sit and thicken up. Those little chia seeds love to soak up the liquid!

- Frozen strawberries – you can swap in other frozen fruit like raspberries or blueberries.
Variations
- Sweeter – test the jam and if you like it a little sweeter, you could add 1 teaspoon of maple syrup
- Other fruit – feel free to get creative with using other fruit!

You can store the jam in an airtight container or mason jar for a week or in the freezer for up to 3-4 months.

The nice thing about this recipe is you can make as much or as little as you want! Feel free to double or triple the recipe if you would like to have a lot on hand and store it in the freezer.

Strawberry Chia Jam
Ingredients
- 1 ½ cups frozen strawberries
- 1 ½ tablespoon chia seeds
- 2 teaspoon lemon juice (fresh squeezed)
- 1 teaspoon vanilla
Instructions
- Heat strawberries in a small-medium saucepan over medium heat. Stir consistently for 8-10 minutes, or until strawberries start to breakdown and bubble.
- Reduce heat to low. Add the chia seeds, lemon and vanilla. Stir for another 5 minutes.
- Remove from heat and let sit for 5-10 minutes so that the jam can thicken up.
