This is a super quick and easy delicious strawberry chia jam with no added sugar. It goes great added on top of toast or a peanut butter sandwich, mixed into oatmeal or cereal and yogurt!
Heat strawberries in a small-medium saucepan over medium heat. Stir consistently for 8-10 minutes, or until strawberries start to breakdown and bubble.
Reduce heat to low. Add the chia seeds, lemon and vanilla. Stir for another 5 minutes.
Remove from heat and let sit for 5-10 minutes so that the jam can thicken up.
