Air-Fryer Chicken & Spinach Nuggets

Equipment

  • 1 Food processor
  • 1 air fryer

Ingredients

  • 1 lb chicken thigh ground
  • 1 cup spinach fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tsps Italian seasoning
  • dash salt and pepper
  • ¾ cup panko bread crumbs
  • 2 tablespoon olive oil for the air fryer

Instructions

  • Add the fresh spinach to a small food processor and pulse until very finely chopped. This helps it mix evenly into the chicken.
  • Transfer the blended spinach to a large bowl. Add the ground chicken, spices, and a dash of salt and pepper. Mix well to combine.
  • Place the breadcrumbs in a shallow bowl.
  • Scoop about 1-inch portions of the chicken mixture and roll into balls. Place each ball into the breadcrumbs, gently press into a nugget shape, and coat all sides evenly.
  • Arrange the nuggets in a single layer in the air fryer basket, leaving a little space between each one. Add the olive oil. Cook at 400°F for 12 minutes, flipping halfway through. Nuggets should be golden brown and crispy on the outside and the internal temperature of the nuggets should reach 165°F.

Notes

If you don't have an air-fryer you can bake these at 400 °F for 18-22 minutes, until golden brown and internal temperature has reached 165 °F.
Dip:
We love serving these nuggets with a homemade honey-mustard sauce. Simply add 1 cup plain yogurt, 1 tablespoon dijon mustard, 1 tablespoon honey (no honey for kids under 1), and ½ teaspoon garlic powder . Mix together and you've got a delicious easy dip!
