Almond Flour and Oat Apple Pancakes

Equipment

  • 1 medium frying pan

Ingredients

Wet ingredients

  • 1 egg
  • ¼ cup greek yogurt plain or vanilla
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 teaspoon maple syrup

Dry ingredients

  • ½ cup almond flour
  • ¼ cup oats Grind into flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon apple pie spice
  • 1 tablespoon coconut oil

Instructions

  • Add the wet ingredients (applesauce, egg, vanilla, greek yogurt, milk, and optional maple syrup) to a bowl. Whisk to combine until smooth.
  • Add the flour, almond flour, baking powder and cinnamon to the bowl. Stir to combine.
  • Heat up a medium frying pan over medium heat. Add the coconut oil. Once the pan is warm and the coconut oil has melted, add spoonfuls of the batter into the pan
  • Cook each pancake for about 3 -5 minutes per side, or until bubbles start to form.
