Add the wet ingredients (applesauce, egg, vanilla, greek yogurt, milk, and optional maple syrup) to a bowl. Whisk to combine until smooth.
Add the flour, almond flour, baking powder and cinnamon to the bowl. Stir to combine.
Heat up a medium frying pan over medium heat. Add the coconut oil. Once the pan is warm and the coconut oil has melted, add spoonfuls of the batter into the pan
Cook each pancake for about 3 -5 minutes per side, or until bubbles start to form.
