Beanut Butter Energy Balls (No-Bake Peanut Butter Energy Balls)

Ingredients

  • 1 cup Medjool dates pitted
  • ½ cup rolled oats
  • ½ cup smooth natural peanut butter
  • ½ cup white beans canned, drained and rinsed
  • 2 teaspoon vanilla extract
  • ¼ cup chocolate chips

Instructions

  • Add the dates, oats, peanut butter, white beans and vanilla to a food processor. Blend until the mixture is smooth and comes together into a soft, sticky dough.
  • Stir in the chocolate chips with a spoon or spatula.
  • Scoop 1 tablespoon of dough at a time and roll it into a ball.
  • Chill the balls in the fridge for 20 minutes to firm up.

Notes

Store in an airtight container in the fridge for up to 4 days, or in the freezer for up to 3 months.
Optional add-in: blend in ¼ cup ground flax or hemp hearts with the other ingredients.
