Carrot Turmeric Fritters

Equipment

  • 1 frying pan

Ingredients

  • 1 cup carrots grated (about 1.5 large, or 2 medium carrots)
  • ½ cup bread crumbs
  • 2 eggs
  • ½ cup cheddar cheese
  • ½ teaspoon turmeric
  • 1 tablespoon olive oil for cooking

Instructions

  • In a large bowl, mix the eggs, grated carrots, bread crumbs, shredded cheese, and turmeric until everything is combined.
  • Scoop out small portions of the mixture and shape them into round patties using your hands or spoon.
  • Heat the olive oil In a large frying pan on medium-low heat. Place the patties into the pan and cook for 5-8 minutes each side, or until golden brown.
  • Transfer the fritters to a plate and let them cool slightly before serving.

Notes

These fritters go great with a side of fruit, cucumber slices, and a little yogurt!
