Coconut Mango Chia Popsicles

These Coconut Mango Chia Popsicles are the perfect hot summer's day snack! Just four simple ingredients and no added sugar, they are the perfect kid-friendly snack.

Equipment

  • 1 Blender or Food processor

Ingredients

  • 1 cup full fat coconut milk
  • 1 tablespoon chia seeds
  • 2 tsps vanilla
  • 1 cup mango frozen or fresh

Instructions

  • In a small bowl, whisk together the coconut milk, chia seeds, and vanilla. Cover and place in the fridge for 10 minutes to allow the chia seeds to soak and thicken slightly.
  • While the chia seed mixture is thickening, chop up the mango into chunks (if using fresh). Add the fresh or frozen mango chunks to a blender or food processor and blend until pureed.
  • Option to swirl the mango puree into the coconut chia mixture for a marbled effect, or layer them separately into popsicle molds.
  • Place popsicle molds in the freezer for 6-8 hours.

Notes

Feel free to mix in any other fruits or veggies you like! ½ mango ½ strawberry is another delicious option!
