These Coconut Mango Chia Popsicles are the perfect hot summer's day snack! Just four simple ingredients and no added sugar, they are the perfect kid-friendly snack.
In a small bowl, whisk together the coconut milk, chia seeds, and vanilla. Cover and place in the fridge for 10 minutes to allow the chia seeds to soak and thicken slightly.
While the chia seed mixture is thickening, chop up the mango into chunks (if using fresh). Add the fresh or frozen mango chunks to a blender or food processor and blend until pureed.
Option to swirl the mango puree into the coconut chia mixture for a marbled effect, or layer them separately into popsicle molds.
Place popsicle molds in the freezer for 6-8 hours.

Feel free to mix in any other fruits or veggies you like! ½ mango ½ strawberry is another delicious option!
