Cottage Cheese Banana Pancakes

These pancakes are a family favourite in our house! They are easy to make, soft, fluffy and very versatile.

Equipment

  • 1 Food processor or blender
  • 1 frying pan

Ingredients

  • ½ cup cottage cheese
  • ½ banana
  • 2 eggs
  • ½ cup rolled oats
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla optional
  • 1 tablespoon coconut oil or other oil of choice

Instructions

  • Add all ingredients (except the oil) to a blender or food processor. Blend until smooth.
  • The batter may look too runny, trust me it will work out!
  • Heat a frying pan or griddle to medium-low heat.
  • Scoop out batter onto pan.
  • Cook until golden brown on each side, approximately 3-4 minutes per side.
  • Add any toppings!
