Add all ingredients (except the oil) to a blender or food processor. Blend until smooth.
The batter may look too runny, trust me it will work out!
Heat a frying pan or griddle to medium-low heat.
Scoop out batter onto pan.
Cook until golden brown on each side, approximately 3-4 minutes per side.
Add any toppings!
