Equipment

  • 1 circle cutter
  • 1 flower shape cutter optional

Ingredients

  • 2 slices whole grain bread
  • 2 tbsps nut butter or seed butter spread thinly
  • ½ banana
  • 4 strawberries 1 for bunny, the rest for the lunch
  • 2 blueberries plus more for the lunch if you like, use fresh for the bunny's eyes, not frozen
  • ¼ red pepper
  • 1 carrot small piece for bunny, remainder for lunch (steamed if needed)

Additional Lunchbox Items

  • 1 egg hard-boiled
  • 2 chocolate chips for the chick egg's eyes
  • ½ yogurt, plain, unsweetened optional
  • 1 tablespoon hemp hearts optional

Instructions

  • First, make the bunny sandwich. Toast two pieces of bread. Spread a thin layer or peanut butter or sunflower seed butter on each layer of bread and mash banana on top of one piece (or use other sandwich filling of choosing). I used sunflower seed butter and banana.
  • Using a circle cutter, cut out a large circle. Cut the leftover crust into two ears (see image above in blog post).
  • Decorate the bunny sandwich. Add two blueberries for the eyes, a strawberry for the nose, and a thin piece of red pepper for the mouth. Add 3 thin slices of carrot on each side for the whiskers.
  • Make the chick egg. Hard-boil an egg and peel. Cut halfway up the egg to remove only the egg white, keeping the yolk intact. Add two chocolate chips onto the egg yolk for eyes, and a small piece of carrot for the nose. Option to add the egg white back on top.
  • Make the rest of the bento box. Cut out shapes from the red pepper if you like. Add in some carrot sticks and red pepper sticks (steam carrots and red peppers for younger children). Add remaining strawberries. Option to add some plain yogurt and hemp hearts.
