Ingredients

  • 5 whole wheat pitas

Barbecue Tex-Mex Pita Pizzas

  • 1 cup barbecue sauce more or less as needed
  • ¾ cup corn
  • ¾ cup black beans
  • ¾ cup red peppers diced
  • ¾ cup shredded chicken optional, omit if wanting a veggie pizza
  • 1 ½ cups mozzarella cheese
  • cilantro optional, to garnish

Classic Pizza Style

  • 1 cup pizza sauce
  • ¾ cup mushrooms sliced
  • ¾ cup red peppers diced
  • ¾ cup pineapple
  • any other toppings of choice
  • 1 ½ cups mozarella cheese
  • basil optional, to garnish

Instructions

  • Preheat the oven to 400℉.
  • Setup a pizza-making station. Lay the pitas out on a parchment-lined baking sheet or on the counter for decorating. Place toppings in small, kid-safe bowls if little ones are helping.
  • Add sauce of choice to each pita and spread evenly. Add toppings (except for any fresh herbs), then finish with a sprinkle of cheese on top.
  • Bake on the prepared baking sheet for 8–10 minutes, or until the cheese is melted and the pitas are crisp.
  • Top with any herbs like basil or cilantro. Slice into pieces and serve.

Notes

  • Cooling Tip: Let the pizzas cool for a couple of minutes before serving, the cheese can be hot and bubbly right out of the oven.
  • Toddler Helpers: Even young toddlers can help spoon sauce or sprinkle cheese! Just pre-chop any toppings for easier grabbing.
  • Dips Make It Fun: Serve with a little side of ranch, yogurt dip, or even extra pizza sauce for dunking.
  • Allergy Adaptations: Use dairy-free cheese or gluten-free pita if needed, both versions still work great!
