Healthier Chocolate Peppermint Rice Krispie Treats

Equipment

Ingredients

  • ½ cup smooth peanut butter all natural
  • 3 tbsps maple syrup
  • ¼ cup chocolate chips semi sweet we love Enjoy Life Dairy Free semi-sweet
  • 2 tbsps coconut oil
  • ½ teaspoon peppermint extract
  • cups crispy rice cereal
  • ¼ cup hemp hearts
  • 1 tablespoon candy canes crushed (optional)

Instructions

  • Line a 7x7 baking dish with parchment paper
  • In a small saucepan over low heat, combine the nut butter, maple syrup, chocolate chips, coconut oil, and peppermint extract. Stir until smooth, then remove from heat.
  • In a large bowl, add the crispy rice cereal and hemp hearts. Stir to combine.
  • Add the chocolate mixture to the bowl with the crispy rice cereal. Stir together until all cereal is coated.
  • Transfer the mixture to the lined baking dish. Press down firmly until evenly spread. Be sure to press down very firmly to help the bars stick together!
  • Add the crushed candy canes on top. Cover and place in the freezer for 30 minutes. Remove at 30 minutes and cut into squares. Transfer to an airtight container or bag and place back in the freezer! This is important as they will still be a tad crumbly. Freeze for another 1-2 hours. When ready to eat, let warm up slightly at room temperature to soften. Pro tip: place parchment paper between the bars so they don't get stuck together in the freezer!
