Healthy Pizza Muffins (Kid-friendly!)

These easy and healthy pizza muffins are the perfect twist on a classic favourite! Made with wholesome ingredients and easily customizable, they are the perfect for school or daycare lunches or on-the-go snacks!

Equipment

Ingredients

Wet Ingredients

  • 1 egg
  • ½ cup olive oil
  • cups pizza sauce store bought or homemade
  • ¼ cup milk whole, 2% or unflavoured plant-based beverage

Dry Ingredients

  • cups all purpose flour
  • 3 tsps baking powder
  • 2 tsps oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • dash salt
  • 1 cup mozzarella cheese grated

Pizza Mix-ins (optional)

  • ½ cup spinach finely diced
  • ½ cup green onion diced
  • ¼ cup mushrooms diced
  • ¼ cup red bell pepper finely diced
  • ¼ cup pineapple diced
  • ¼ cup ham or pepperoni diced
  • ¼ cup basil fresh, finely chopped

Instructions

  • Preheat oven to 375℉. Grease or line a 12-cup muffin tin.
  • In a medium bowl, whisk together the egg, olive oil, pizza sauce, and milk.
  • In a separate large bowl, stir together the flour, baking powder, oregano, garlic powder, Italian seasoning, and salt.
  • Pour the wet ingredients into the dry ingredients and mix gently to combine.
  • Fold in the cheese and any desired toppings.
  • Scoop the batter into the muffin cups, filling about ¾ of the way full.
  • Bake for 18-22 minutes, or until golden brown on top and a toothpick comes out clean.
  • Let cool in the pan for 5 minutes and then transfer to a wire rack.
