In a medium bowl, whisk together the egg, olive oil, pizza sauce, and milk.
In a separate large bowl, stir together the flour, baking powder, oregano, garlic powder, Italian seasoning, and salt.
Pour the wet ingredients into the dry ingredients and mix gently to combine.
Fold in the cheese and any desired toppings.
Scoop the batter into the muffin cups, filling about ¾ of the way full.
Bake for 18-22 minutes, or until golden brown on top and a toothpick comes out clean.
Let cool in the pan for 5 minutes and then transfer to a wire rack.
