Ingredients

  • 1 cup Medjool dates pitted
  • ½ cup peanut butter smooth

  • ¼ cup unsweetened, shredded coconut
  • 1 teaspoon vanilla

Instructions

  • Add the peanut butter, hemp hearts, coconut and vanilla. Blend together.
  • Add in flavour mix-ins (such as chocolate chips, dried cranberries, other dried fruit, cocoa powder). Blend until mixed.
  • Line a square pan with parchment paper. Scoop bar mixture into pan and press down firmly with a spatula. Cut into bars. Ready to eat as is, or you can place in the fridge for 10-15 minutes to firm up a bit more!

Notes

For the different flavour options:
    • Peanut butter chocolate chip - add in ¼ cup milk chocolate or dairy free chocolate chips.
    • Chocolate and cranberry - my personal favourite. Add ¼ cup chocolate chips and ¼ cup dried cranberries.
    • Double chocolate - add ¼ cup cocoa powder and ¼ cup chocolate chips.
