Peanut Butter & Strawberry Toddler Breakfast Bars

These Peanut Butter & Strawberry Toddler Breakfast Bars are soft, naturally sweetened, and so easy to make! Made with just 6 ingredients, and with a boost or iron, they are a great breakfast or snack option for your little ones.

Equipment

  • 1 Small baking dish (8" x 6.5")

Ingredients

  • 1 banana
  • 1 egg
  • ½ cup strawberries diced
  • 1 tablespoon chia seeds
  • 2 tbsps peanut butter all natural, smooth
  • cup iron fortified oat cereal

Instructions

  • Pre-heat oven to 400℉.
  • Line a small baking dish with parchment paper or lightly grease it. Add the banana and mash well. Note: It can be tricky to mash the banana directly on parchment paper. If using parchment, you can mash the banana and mix all the ingredients in a small bowl first, then transfer to the baking dish.
  • Add the egg and whisk together with the banana.
  • Add the remaining ingredients and stir to combine.
  • Bake in the oven for 20-22 minutes, until golden brown on top and cooked all the way through.
  • Let cool slightly before serving.
