Reindeer Pancakes

These reindeer pancakes are a creative way to bring a little holiday fun into your little one's breakfast. These pancakes are soft and fluffy, and your child will love the cute reindeer design!

Ingredients

  • ¼ cup Greek yogurt
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 teaspoons maple syrup optional
  • ½ cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 tablespoon oil of choice or butter

For the reindeer

  • 1 banana
  • 2 blueberries
  • 4 raspberries or strawberries
  • 3 tbsps chocolate chips melted

Instructions

  • First make the pancakes. Add the egg, Greek yogurt, vanilla, optional maple syrup and lemon juice. Stir together.
  • Add the dry ingredients. Stir to combine.
  • Heat a frying pan or griddle on medium heat. Add the cooking oil or butter, then scoop out 3 tbsps of batter onto pan to make one pancake.
  • Cook pancakes 3-4 minutes per side, or until golden brown on both sides.

Decorate the reindeer

  • Use the fruit to create the reindeer's face. Use two pieces of banana and two blueberries for the reindeer's eyes. Use remaining banana for the reindeer's ears and scarf. Add strawberries or raspberries to the reindeer's scarf.
  • Melt the chocolate in the microwave heating on 20 second increments. Once melted, pour chocolate into a small ziploc bag. Cut a hole at the corner. Squeeze the chocolate out of the bag to form the antlers and the reindeer's smile.
