Savoury & Sweet Quinoa Egg Bites

These Savoury &Sweet Quinoa Egg Bites are soft, flavourful, and perfect for toddlers. Made with grated apple, carrot, cheese, and cooked quinoa, they’re easy to prep, freezer-friendly, and great for lunches or snacks.

Equipment

  • 1 baking sheet

Ingredients

  • cup quinoa (cooked) cooled (about ½ cup dry quinoa)
  • 1 carrot peeled, grated
  • 1 apple medium, peeled, grated
  • 1 shallot 1 small, or ½ a large
  • 1 cup cheddar cheese don't use pre grated
  • 2 tablespoon raisins minced
  • 1 egg
  • ½ teaspoon garlic powder
  • ½ teaspoon sage

Instructions

  • Preheat the oven to 400℉ and line a baking sheet with parchment paper.
  • If you haven't yet done so, cook the quinoa according to package instructions and let cool.
  • While quinoa is cooking, Wash, peel, and grate the carrot. Wash, peel, and grate the apple. Squeeze out excess moisture from the apple. Grate the cheese, finely dice the shallot and dice the raisins.
  • Add the cooked and cooled quinoa, grated carrot, grated apple, cheese, diced shallot, diced raisins and all remaining ingredients to a large bowl. Stir well to combine.
  • Scoop the mixture and gently form into small balls. Place them on a parchment-lined baking sheet, spacing them slightly apart.
  • Bake at 400°F for 18-22 minutes, or until the bites are set and lightly golden on the bottom.
  • Let them cool for a few minutes, they firm up as they rest. Serve warm or let them cool and add to a lunchbox.
