Strawberry Frozen Yogurt Bark

A fun cool snack made with yogurt and a swirl of strawberry chia jam! This Frozen Strawberry Yogurt Bark is a snack your kids are sure to love.

Ingredients

Strawberry Chia Jam

  • cup frozen strawberries
  • 1 tablespoon chia seeds

Yogurt Bark

  • 1 cup yogurt plain or vanilla
  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup *omit if using vanilla yogurt

Optional mix-ins

  • ½ cup finely diced strawberries
  • 2 tbsps maple syrup

Instructions

Make The strawberry chia jam

  • In a medium saucepan, add the strawberries and cook over medium heat for 8-10 minutes, until they begin to break down.
  • Reduce heat to low and stir in the chia seeds for 5 minutes.
  • Remove from heat and let sit for 5-10 minutes to thicken up.

Make The Yogurt Base

  • Add the yogurt, maple syrup and vanilla. Stir together.
  • Spread the yogurt onto a parchment-lined baking sheet in an even layer, about ½ inch thick.
  • Once the jam has cooled and thickened up, swirl it into the yogurt.
  • Add any toppings you like! Chocolate chips, fresh fruit, and finely shredded coconut are all great options.
  • Place the baking sheet in the freezer for at least 60 minutes, or until the bark is firm. Once frozen, cut or break into pieces.

Storage

  • Transfer the bark pieces to an airtight container and store in the freezer. Let it soften slightly before serving, however, it will melt quickly!
