    Almond Flour and Oatmeal Apple Pancakes (gluten-free)

    These Almond Flour and Oatmeal Pancakes are a great breakfast or snack option for toddlers and kids. These pancakes are full of wholesome ingredients and are a nice fluffy texture. The perfect way to kickstart the morning!

    We love pancakes in this household! Often saved for the weekends, but these pancakes are so quick and easy to make, we often have them during the week too. Plus they are so easy to prep ahead of time and store in the freezer. Then you can just pull them out and heat them up for an even more convenient option!

    These mini pancakes are another great option to try out!

    Ingredients

    Ingredients for almond flour and oatmeal pancakes labelled and on white marble background.
    • egg
    • vanilla
    • yogurt (plain full fat or Greek full fat)
    • lemon juice
    • maple syrup 
    • almond flour
    • oats
    • baking powder
    • baking soda
    • cinnamon
    • apple pie spice
    • coconut oil or oil of choice

    Instructions

    Step 1 for pancakes. All ingredients are added to a purple bowl.

    Combine the ingredients into a bowl.

    Step 2 for pancakes. Ingredients are mixed together in a purple bowl.

    Stir to combine.

    Step 3 for pancakes. Coconut oil is melting on frying pan.

    Heat up a medium frying pan and add the coconut oil. Once melted, add spoonfuls of batter to the pan.

    Step 4 for pancakes. Add batter to frying pan and cook 5 minutes per side.

    Cook pancakes about 3-5 minutes per side or until bubbles start to form.

    Hint: Blending up the oats into oat flour helps with the consistency of these pancakes!

    Substitutions

    • Gluten-free - you can swap the flour with an oat flour or a gluten-free flour

    Equipment

    Medium to large frying pan

    Storage

    You can store these pancakes in an airtight container in the fridge for up to 3 days or in the freezer for 1-2 months. When ready to eat, just pop them in the microwave or oven to heat up!

    Top tip

    You can play around with different toppings for these pancakes. Try adding some sliced banana or cinnamon apples on top!

    Equipment

    • 1 medium frying pan

    Ingredients

    Wet ingredients

    • 1 egg
    • ¼ cup yogurt
    • 1 teaspoon vanilla
    • 1 teaspoon lemon juice
    • 2 teaspoon maple syrup

    Dry ingredients

    • ½ cup almond flour
    • ¼ cup oats Grind into flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon cinnamon
    • ¼ teaspoon apple pie spice
    • 1 tablespoon coconut oil

    Instructions

    • Add the wet ingredients (applesauce, egg, vanilla, yogurt, milk, and optional maple syrup) to a bowl. Whisk to combine until smooth.
    • Add the flour, almond flour, baking powder and cinnamon to the bowl. Stir to combine.
    • Heat up a medium frying pan over medium heat. Add the coconut oil. Once the pan is warm and the coconut oil has melted, add spoonfuls of the batter into the pan
    • Cook each pancake for about 3 -5 minutes per side, or until bubbles start to form.
