    Coconut Mango Chia Popsicles

    Summertime and popsicles go together like campfires and s'mores, sunshine and lemonade, beaches and sandy toes...! These super simple Coconut Mango Chia Popsicles are made with only four ingredients and have no added sugar. They are the perfect kid-friendly snack for hot summer afternoons!

    Toddler Tip

    For young toddlers, or popsicle newbies, let the popsicles sit out for 5-10 minutes before serving. This allows them to soften slightly to make them a little easier to nibble on!

    How To Make Coconut Mango Chia Popsicles

    Step 1 coconut milk added to bowl with chia seeds.

    In a small bowl, whisk together the coconut milk, chia seeds, and vanilla. Cover and place in the fridge for 10 minutes.

    Step 2 mango pureed in food processor.

    In a blender or food processor, add the mango chunks and blend until pureed.

    Step 3. Coconut mango chia mixture poured into popsicle molds.

    Add the pureed mango and coconut mixture to the popsicle molds.

    Place a cover over the popsicles and place in the freezer for at least 6-8 hours.

    Hint: I highly recommend using popsicle molds that come with a cover or lid and bonus if they stack on top of each other! This helps save room in the freezer and prevents any strays that end up lost in the icy depths of the freezer abyss. These are the ones I used from Tovolo, we love them!

    Substitutions

    • Fruit swaps - you could swap in pineapple, strawberry or any other berries - they all work well in this popsicle!
    • No chia seeds? - this would be disappointing but you could omit or add in some hemp hearts.

    Storage

    Store the popsicles in the freezer for 1-2 months. Once frozen solid, you can pop them out of the molds and store in a labelled freezer bag if you prefer.

    Top tip

    Make these together! Toddlers love scooping chia seeds, pouring ingredients, and pushing the blender button (with supervision!). The more they help, the more excited they’ll be to try the finished product!

    FAQ

    Can I use fresh mango instead of frozen?

    Yes, just peel and chop the mango and puree it the same way you would if it were frozen.

    Are chia seeds okay for toddlers?

    Yes! Chia seeds are safe and offer fibre and healthy fats. Chia seeds soak up a lot of moisture, so this is why we let them sit with the coconut milk for ten minutes before pouring into the popsicle molds.

    My toddler doesn't like cold things, what can I do?

    You can absolutely let these soften into a smoothie bowl and serve with a spoon or pour the mixture into a squeeze pouch for some no-freeze options. It defeats the "popsicle" part, but still a delicious option! You can also check out my watermelon pizza which is a great "cool" snack that isn't frozen.

    Equipment

    • 1 Blender or Food processor

    Ingredients

    • 1 cup full fat coconut milk
    • 1 tablespoon chia seeds
    • 2 tsps vanilla
    • 1 cup mango frozen or fresh

    Instructions

    • In a small bowl, whisk together the coconut milk, chia seeds, and vanilla. Cover and place in the fridge for 10 minutes to allow the chia seeds to soak and thicken slightly.
    • While the chia seed mixture is thickening, chop up the mango into chunks (if using fresh). Add the fresh or frozen mango chunks to a blender or food processor and blend until pureed.
    • Option to swirl the mango puree into the coconut chia mixture for a marbled effect, or layer them separately into popsicle molds.
    • Place popsicle molds in the freezer for 6-8 hours.

    Notes

    Feel free to mix in any other fruits or veggies you like! ½ mango ½ strawberry is another delicious option!
