Ingredients
- eggs
- carrot (grated)
- baby spinach leaves
- cheddar cheese (grated)
- rolled quick oats
- olive oil
- onion powder
- baking powder

Instructions
Step 1. Peel and grate the carrot. Add the grated carrot and the rest of the ingredients to a food processor.
Step 2. Puree the ingredients until well mixed.
Step 3. Add batter to a warmed waffle maker.
Step 4. Cook waffle until golden brown.
Hint: Be sure to grease the waffle maker so that the waffle doesn’t stick!

- Vegetables – Swap out the carrot for grated beets or baby kale instead of baby spinach.
