Ingredients

- eggs
- carrot (grated)
- baby spinach leaves
- cheddar cheese (grated)
- rolled quick oats
- olive oil
- onion powder
- baking powder

Instructions

Step 1. Peel and grate the carrot. Add the grated carrot and the rest of the ingredients to a food processor.

Step 2. Puree the ingredients until well mixed.

Step 3. Add batter to a warmed waffle maker.

Step 4. Cook waffle until golden brown.
Hint: Be sure to grease the waffle maker so that the waffle doesn’t stick!
Substitutions
- Vegetables – Swap out the carrot for grated beets or baby kale instead of baby spinach.
- Replace eggs with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) to make them egg-free.

You can store the waffles in an air tight container for 1-2 days. You can also freeze the waffles for up to a month. When ready to eat, heat back up in a toaster oven or conventional oven.

Ingredients
- 2 eggs
- 1 carrot
- ⅓ cup baby spinach
- ⅓ cup cheddar cheese
- 1 cup quick oats
- 2 tablespoons olive oil
- ⅛ teaspoon onion powder
- ½ teaspoon baking powder
Instructions
- Preheat a waffle maker
- Peel and grate the carrot
- In a food processor, add all of the ingredients
- Puree batter until mixed together
- Grease waffle maker with oil
- Pour batter into waffle maker, cook 2-3 minutes per side, until golden brown
