    Toddler Tip: These waffles are a fantastic way to incorporate vegetables in a fun, engaging way. Instead of "sneaking the veggies in", involve your child in the process by talking about the colourful ingredients you're using, like bright carrots or green spinach. This helps support your child to be a happy, healthy, curious eater!

    Parent Tip: These savoury waffles are a great option for packing for a daycare or pre-school lunch. They can be fun to pair with a dip, which not only encourages additional flavours, but will be fun for your child to dip the waffle into. Toddlers love finger foods they can pick up and explore, and these waffles are perfect for that!

    • carrot (grated)
    • baby spinach leaves
    • cheddar cheese (grated)
    • rolled quick oats
    • olive oil
    • onion powder
    • baking powder

    Instructions

    Step 1. Peel and grate the carrot. Add the grated carrot and the rest of the ingredients to a food processor.

    Step 2. Puree the ingredients until well mixed.

    Step 4. Cook waffle until golden brown.

    Hint: Be sure to grease the waffle maker so that the waffle doesn't stick!

    Substitutions

    • Vegetables - Swap out the carrot for grated beets or baby kale instead of baby spinach.
    • Replace eggs with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) to make them egg-free.

    Variations

    • Herbs- add in different fresh herbs such as basil or oregano!

    You can store the waffles in an air tight container for 1-2 days. You can also freeze the waffles for up to a month. When ready to eat, heat back up in a toaster oven or conventional oven.

    Nutrition tip

    These savoury waffles can pack in important nutrients like fibre from the veggies and whole oats, as well as protein, and calcium from cheese and eggs. Adding vegetables like spinach or zucchini increases their vitamin A and Vitamin C content, making this a great meal option for growing toddlers. They also hold up really well in lunchboxes!

    Ingredients

    • 2 eggs
    • 1 carrot
    • ⅓ cup baby spinach
    • ⅓ cup cheddar cheese
    • 1 cup quick oats
    • 2 tablespoons olive oil
    • ⅛ teaspoon onion powder
    • ½ teaspoon baking powder

    Instructions

    • Preheat a waffle maker
    • Peel and grate the carrot
    • In a food processor, add all of the ingredients
    • Puree batter until mixed together
    • Grease waffle maker with oil
    • Pour batter into waffle maker, cook 2-3 minutes per side, until golden brown
