    I often think of French toast as a weekend breakfast, one for slower mornings. But what I've realized is that it truly can be so easy to make. This has even become one of our breakfasts that we rotate through for busier weekday mornings. What I especially love about this recipe is that it is taking a classic, and adding a boost of iron with an iron-fortified oat cereal. I love getting creative with adding iron-fortified oat cereal into different recipes as iron is such an important nutrient for kids and this can be an easy way to provide a little boost!     What You Will Need To Make Iron-Boosted French Toast For Toddlers

    • egg
    • milk of choice
    • vanilla
    • apple pie spice (or cinnamon)
    • iron-fortified oat cereal (we love Baby Gourmet Oat Cereal)
    • whole wheat bread
    • coconut oil (or other oil of choice to grease pan)

    How To Make Easy Toddler French Toast

    One bowl. One pan. Let's make this super easy!

    In a wide, shallow bowl, add all ingredients except bread.

    Whisk ingredients together until thoroughly combined.

    Dip the bread into the mixture and flip to ensure both sides are coated. Let the bread soak for a few seconds to really absorb the mixture.

    Add a little oil to a frying pan or electric griddle. Cook for 4-5 minutes per side on medium heat until golden brown and cooked through.

    Substitutions

    • Egg-less - swap in ¼ cup unsweetened apple sauce or ¼ cup mashed banana
    • Gluten-free - use a gluten-free bread instead of a regular whole wheat bread

    Variations

    One of the great things about French toast is it is so easy to mix up! This version includes a little apple pie spice, but here are some other ideas.

    • Pumpkin - add 2 tablespoon pumpkin puree and ¼ teaspoon pumpkin pie spice
    • Apple cinnamon - Add ¼ cup apple sauce and ¼ teaspoon cinnamon

    • Frying pan or electric griddle

    Storage

    You can store this French toast in an airtight container in the fridge for 2-3 days, or in a freezer bag and freeze for 2-3 months. When ready to eat, just heat back up in the oven or toaster, or in the microwave in 20 second increments until heated through.

    Toddler Tip

    Pair this iron-boosted French toast with vitamin C-rich fruits like berries, mango, or orange slices. The vitamin C helps your toddler absorb more of the iron from the cereal. This French toast also goes great with a little chia jam on top like this Strawberry Chia Jam!

    FAQ

    What if I don't have iron-fortified oat cereal?

    You can still make this as regular French toast, just know that the iron amount will be less since you aren't using the fortified oat cereal.

    What can I serve this with?

    This French Toast goes great with some fruit on the side! I also love serving it with a little chia jam spread on top, or a thin layer of smooth nut butter. My kids especially enjoy eating it with a little yogurt to dip it into.

    Can I make this ahead of time?

    Yes, which makes it even easier to serve for breakfast! This French toast can be made ahead and stored in the fridge for 2-3 days or in the freezer for up to 2 months. Reheat in the oven, toaster or microwave until warmed through before serving.

    Equipment

    • 1 Frying pan or electric griddle

    Ingredients

    • 1 egg
    • 3 tbsps milk any milk of choice
    • ½ teaspoon apple pie spice or cinnamon
    • 1 teaspoon vanilla
    • 3 tbsps iron-fortified oat cereal
    • 2 pieces bread whole wheat
    • 1 tbsp coconut oil

    Instructions

    • In a shallow bowl, whisk together the egg, milk, apple pie spice, vanilla, and iron-fortified cereal until smooth. Make sure the cereal is well combined so there are no lumps.
    • Heat a non-stick pan or griddle over medium-low heat and lightly grease with butter or oil.
    • Dip each slice of bread into the egg mixture, flipping to coat both sides well.
    • Place the soaked bread onto the pan and cook for about 3-4 minutes per side, or until golden and fully cooked through.
    • Remove from the pan, let cool slightly, and cut into strips or small pieces as needed.
    • Serve with fruit like berries for a vitamin C boost to support iron absorption.
