Ingredients for these Easy Pop Tarts

Here is what you'll need to make these surprisingly easy Pop Tarts!

Ingredients for homemade healthy pop tarts on the counter.
    • Flour
    • Full fat Greek yogurt
    • Baking powder
    • Salt
    • Brown sugar
    • Vanilla
    • Strawberry Chia Jam
    • A little coconut oil to brush on top

    Optional frosting:

    • powdered sugar
    • milk
    • vanilla

    See recipe card for quantities.

    Instructions

Here is an overview of how to make these pop tarts, or you can scroll down to the recipe card for full details.

step 1 all the ingredients added into a blue bowl and stirred together.

Add the flour, baking powder, and salt to a bowl. Whisk together to combine. Add the Greek yogurt, brown sugar, and vanilla. Mix together to start to form a shaggy dough.

step 2, the dough is formed into a ball on a lightly floured surface.

Place the dough on a floured surface and gently knead until it forms a smooth dough ball. If the dough feels sticky, add a little more flour.

step 3, dough is rolled into a rectangle and cut into small rectangles

Using a floured rolling pin, roll the dough into a rectangle (or as close to a rectangle as you can!). Slice down the middle lengthwise, and then across about 5-6 times to form rectangles.

step 4, chia jam mixture added in the middle and top layer of pastry added on top sealed with fork prints along the side

Place half the rectangles onto a baking sheet and scoop out 1 tablespoon of chia jam into the middle. Place the other pastry piece on top and gently press the edges down with a fork to seal. Brush a little bit of melted coconut oil on top. Bake in the oven at 350 degrees for 20-25 minutes until golden brown on top.

Hint: I found brushing a little coconut oil on top helped the pop tarts crispy up a little more than if I used milk. Also, the end pop tarts may be a little smaller than the others if your rectangle isn't quite perfect - that's ok!

    Substitutions

    • Filling - you can easily swap in different fillings such as a blueberry chia jam or raspberry chia jam. Or you can always use a regular jam, but just know that regular jams will have a lot more sugar. But honestly, you're only adding a little bit into these pop tarts so not a big deal!

    Equipment

    • Medium bowl
    • Rolling pin
    • Baking Sheet

    Storage

You can store these pop tarts in the fridge in an air tight container for 4-5 days, or they can be frozen for 2-3 months. When ready to eat, you can heat them back up in the oven, air fryer or pop 'em in the toaster.

    Toddler Tip

Let your toddler help scoop the jam out or press down on the edges with a fork. Involving them in a prep step helps build familiarity and curiosity towards food without any pressure!

    FAQ

Can I use regular jam for a filling?

Yes, absolutely. You can swap the strawberry chia jam for a regular jam. Just know that regular jams will have more sugar than the chia jam, which is naturally sweetened with only the strawberries. You'll also want to make sure the filling is thick, otherwise it will leak out.

    Are these healthy for toddlers?

Yes! This recipe uses a full fat Greek yogurt in the dough, adding healthy fats and protein, and has very minimal sugar in the whole recipe (unless you add the optional frosting). The chia jam is full of berries and chia seeds, providing vitamin C, fibre and omega-3 fats.

Can these pop tarts go in the toaster?

You better believe they can! Just make sure you leave the frosting off until afterwards, or it will make for a very messy situation. Because these pop tarts are on the smaller side, I put them in the tall way, so that you're able to get them out once they are done. Also, make sure there is no chia jam filling coming out the sides, or just wipe that off before popping them in.

    Optional Frosting

    • ⅓ cup powdered sugar
    • 1-2 tsps milk start with 1 tsp, add as needed to desired consistency
    • ½ teaspoon vanilla

    Instructions

    • Preheat oven to 350℉ and line a baking sheet with parchment paper.
    • In a medium bowl, add the flour, baking powder, and salt. Stir to combine.
    • Add the full-fat Greek yogurt, brown sugar, and vanilla to the bowl and mix until a shaggy dough starts to form.
    • Turn dough out onto a lightly floured surface. Knead gently to form a smooth ball of dough. If the dough feels sticky, sprinkle with a little extra flour as needed.
    • Roll the dough with a lightly floured rolling pin into a rectangle shape. Then slice the dough lengthwise down the middle, and then again, about 5 times, in the opposite direction to form small rectangles (about 10 in total).
    • Place 5 of the rectangles onto the lined backing sheet. Spoon out just under a tablespoon of the strawberry chia jam into the middle of each rectangle. Then place the other rectangle pieces on top. Seal each one by gently pressing with a fork around the edges. Brush a little melted coconut oil on top.
    • Bake the pop tarts for 20-24 minutes, until golden brown on top. Allow to cool before adding optional glaze.
    • These pop tarts are delicious without the frosting, but if you'd like to add a frosting, mix together the powdered sugar, milk, and vanilla and whisk together until a thick frosting forms. Once the pop tarts have cooled, add the frosting. Optional to add a few sprinkles on top!
