How To Make These Incredibly Easy PB & Strawberry Bars

Add one banana to a small baking dish

Mash the banana. Add the egg and whisk to combine.

Add the cut-up strawberries.

Add the remaining ingredients and stir to combine. Bake in the oven at 400 degrees F for 20-22 minutes.
Hint: I like using a small baking dish for this recipe, 8″ x 6.5″ works well. Always ensure there are no open spots on the bottom of the pan and that the mixture covers all of the surface area of the pan for even heating.
Substitutions
This is a versatile recipe that you can easily mix and match different ingredients.
- Strawberries – swap out the strawberries for raspberries
- Nut-free – use sunflower seed butter or pumpkin seed butter instead of peanut butter to make it nut-free
- No fortified iron cereal – grind up oats in a blender and you can use those instead or whole wheat flour.
- Add-ins – you can also add a tablespoon of hemp hearts or ground flax
Equipment
- All you need is one small oven safe baking dish!
Storage
Store in the fridge in a sealed container for up to 3 days or in the freezer for 1–2 months. If freezing, cut the bars first and place a piece of parchment paper between layers to prevent sticking. Store in a freezer-safe bag or airtight container.

Iron is an important nutrient for little ones (well, and everyone!), supporting children with the rapid growth and brain development that they are going through. Children ages 1-3 years need 7mg per day, and 4-8 year olds need 10mg per day, highlighting the importance of offering iron-rich foods every day! In this recipe, I’ve incorporated iron-fortified baby cereal, and paired it with some vitamin C-rich strawberries to help with absorption.

Peanut Butter & Strawberry Toddler Breakfast Bars
Equipment
- 1 Small baking dish (8" x 6.5")
Ingredients
- 1 banana
- 1 egg
- ½ cup strawberries diced
- 1 tablespoon chia seeds
- 2 tbsps peanut butter all natural, smooth
- ⅓ cup iron fortified oat cereal
Instructions
- Pre-heat oven to 400℉.
- Line a small baking dish with parchment paper or lightly grease it. Add the banana and mash well. Note: It can be tricky to mash the banana directly on parchment paper. If using parchment, you can mash the banana and mix all the ingredients in a small bowl first, then transfer to the baking dish.
- Add the egg and whisk together with the banana.
- Add the remaining ingredients and stir to combine.
- Bake in the oven for 20-22 minutes, until golden brown on top and cooked all the way through.
- Let cool slightly before serving.

Could you sub the fortified cereal for something else?

You could grind up some rolled oats into an oat flour and that would work great! It won’t have the same iron boost but still works well as a substitution if you don’t have the fortified oat cereal.
