    If you've got little ones in your house, pancakes are likely a staple. These Cottage Cheese Banana Pancakes are quick and easy to make, and make the perfect breakfast or snack! Both my little ones love these soft pancakes!

    As a busy mom and dietitian, I'm always trying to come up with ideas for meals and snacks that are yummy, nourishing and that my kids will both enjoy (I don't want to make any more meals than I have to!). These pancakes are simple, made with wholesome ingredients and are super versatile.

    Cottage Cheese Pancakes: Tips to make these extra fun

    🥞 Provide a few options for pancake toppings for your child. Toddlers love having some autonomy and choice with their food. Let your child pick from a few toppings that you have decided on such as strawberries, blueberries, thinned peanut butter or shredded apple.

    🥞 If you're feeling up to it, you can cut the pancakes into fun shapes for your child. A little change up in presentation goes along way with toddlers! Try using a cookie cutter or a shape cutter and turn the pancake into a heart or dinosaur or whatever shape you have on hand.

    Ingredients

    • banana
    • cottage cheese
    • egg
    • vanilla (optional)
    • cinnamon
    • oil for the pan

    Instructions For How to Make Cottage Cheese Banana Pancakes

    Step 1 for cottage cheese banana pancakes, add all ingredients to a food processor or blender.

    Add all ingredients except the oil into a blender or food processor.

    Step 2 for pancakes. Blend all ingredients together in a food processor.

    Blend the ingredients until smooth.

    Step 3 for pancakes, add batter to medium size frying pan on medium low heat.

    Scoop batter onto a medium frying pan on medium-low heat.

    Step 4, cook until golden brown on each side. Served in wooden toddler bowl.

    Cook pancakes until golden brown, approximately 3-4 minutes each side.

    Nutrition Tips:

    • Protein: Cottage cheese is a great protein source, which is important for children's growth and development. Use a full fat cottage cheese to also provide important fats for kids.
    • Fibre: Fibre is important for supporting the digestive system and helping with regular bowel movements. These pancakes pack in fibre from the bananas and the whole oats!

    Substitutions

    • Cottage cheese - You could swap in yogurt for the cottage cheese, but then why not make yogurt pancakes instead?
    • Gluten-free - Good news! Oats are naturally gluten free. However, if you are celiac, you should check the label on your oats to ensure they are 100% certified gluten-free (otherwise there is risk for cross-contamination).
    • Banana - You can swap in ¼ cup applesauce for banana.

    Variations

    • Blueberry - blend in ¼ cup of blueberries to make fun blue pancakes!
    • Peanut butter - add 1 tablespoon of peanut butter to the batter

    Equipment

    • Blender
    • Frying pan or griddle

    Storage

    Store leftover pancakes in an airtight container in the fridge for up to two days. Or you can store them in the freezer for up to a month. When ready to eat, just reheat them in the microwave or oven.

    Equipment

    • 1 Food processor or blender
    • 1 frying pan

    Ingredients

    • ½ cup cottage cheese
    • ½ banana
    • 2 eggs
    • ½ cup rolled oats
    • ½ teaspoon cinnamon
    • 1 teaspoon vanilla optional
    • 1 tablespoon coconut oil or other oil of choice

    Instructions

    • Add all ingredients (except the oil) to a blender or food processor. Blend until smooth.
    • The batter may look too runny, trust me it will work out!
    • Heat a frying pan or griddle to medium-low heat.
    • Scoop out batter onto pan.
    • Cook until golden brown on each side, approximately 3-4 minutes per side.
    • Add any toppings!

      While this recipe says it’s for toddlers, it’s a fan favourite in our whole house! I love how simple and easy this recipe is, but that’s how the Toddler Kitchen makes everything! Very impressed!
