If you’ve got a baby or toddler, pancakes are likely a staple in your house. These cottage cheese banana pancakes are quick and easy to make, full of protein and make the perfect breakfast or snack! My little one is 8 months at the time of writing this blog post and this is one of our go-to baby led weaning foods!

As a busy mom and dietitian, I’m always trying to come up with ideas for meals and snacks that are yummy, nourishing and that my baby AND toddler will both enjoy (I don’t want to make any more meals than I have to!). These pancakes are simple, made with wholesome ingredients and are super versatile.

🥞 Provide a few options for pancake toppings for your child. Toddlers love having some autonomy and choice with their food. Let your child pick from a few toppings that you have decided on such as strawberries, blueberries, thinned peanut butter or shredded apple.
🥞 If you’re feeling up to it, you can cut the pancakes into fun shapes for your child. A little change up in presentation goes along way with toddlers! Try using a cookie cutter or a shape cutter and turn the pancake into a heart or dinosaur or whatever shape you have on hand.

Instructions For How to Make Cottage Cheese Banana Pancakes

Add all ingredients except the oil into a blender or food processor.

Blend the ingredients until smooth.

Scoop batter onto a medium frying pan on medium-low heat.

Cook pancakes until golden brown, approximately 3-4 minutes each side.

- Fibre: Fibre is so important for supporting the digestive system and helping with regular bowel movements. These pancakes pack in fibre from the bananas and the whole oats!
Substitutions
- Cottage cheese – You could swap in yogurt for the cottage cheese, but then why not make Greek yogurt pancakes instead?
- Gluten-free – Good news! Oats are naturally gluten free. However, if you are celiac, you should check the label on your oats to ensure they are 100% certified gluten-free (otherwise there is risk for cross-contamination).
- Banana – You can swap in ¼ cup applesauce for banana.
Variations
- Blueberry – blend in ¼ cup of blueberries to make fun blue pancakes!
- Peanut butter – add 1 tablespoon of peanut butter to the batter

Storage
Store leftover pancakes in an airtight container in the fridge for up to two days. Or you can store them in the freezer for up to a month. When ready to eat, just reheat them in the microwave or oven.

Yes! Ricotta cheese works really well in these pancakes as an option.
It is common for children to go through various phases of liking and not liking some foods. Continue to offer and provide exposure to these foods for your child. Because these pancakes blend in the cottage cheese, they may be an easier option for your child to try. Just be sure to let them know cottage cheese is in the pancakes. We want to be open and honest with our children when it comes to meals!

Equipment
- 1 Food processor or blender
- 1 frying pan
Ingredients
- ½ cup cottage cheese
- ½ banana
- 2 eggs
- ½ cup rolled oats
- ½ teaspoon cinnamon
- 1 teaspoon vanilla optional
- 1 tablespoon coconut oil or other oil of choice
Instructions
- Add all ingredients (except the oil) to a blender or food processor. Blend until smooth.
- The batter may look too runny, trust me it will work out!
- Heat a frying pan or griddle to medium-low heat.
- Scoop out batter onto pan.
- Cook until golden brown on each side, approximately 3-4 minutes per side.
